Broccoli Bake

¼C chopped onion
6T butter
2T flour
½C water
½C crumbled saltine crackers
8ozcheeze wiz
20ozchopped broccoli
3  eggs, beaten

Preheat oven to 325.   Sauté onion in 4 T butter, stir in flour, add water, cook until thick and bubbly. Remove from heat and blend in cheese then add to  thawed broccoli in bowl,  add beaten eggs,  mix lightly to blend.  Pour into greased 1½ qt pan,  cover with crumbled saltines and dot with remaining butter.  Bake 30-40 minutes until lightly browned.

Broiled Tomatoes
 
3-4large tomatoes
  vegetable spray

Slice tomatoes into ½ inch thick slices.  Place on a cooking sheet that has been sprayed with vegetable spray.  Sprinkle with Parmesan cheese and place under broiler just until cheese melts.

Buttered Steamed Turnips
 
In a wide frying pan or electric frying pan over high heat, melt 2 tablespoons butter or margarine, adding 4 cups thinly sliced turnips and 5 tablespoons water.  Cover and cook, stirring occasionally, for 4 to 5 minutes or until tender.  Season with salt and pepper.

Creamed Spinach
 
 3T    butter
 2C    finely chopped onions
 3T    flour
 3C    chicken broth
 3C    heavy cream
 3C    vinegar
  salt
  pepper
  nutmeg
1-2 large bunches of spinach

In skillet heat butter and onions until onions are soft.  Add flour until it thickens.  Add chicken broth, heavy cream, vinegar, salt and pepper until it starts to thicken.  Steam the spinach until it starts to droop, then double knife shred the spinach.  In a large bowl pour cream sauce over spinach and add a dash of nutmeg on top.

Marinated Vegetables
 
1/3Coil

2/3Cvinegar
 2Tsalt
 ½tpepper
  tomatoes
  cucumbers
  onions
  green peppers
  celery
  Any vegetable of your choice

Mix first five ingredients thoroughly and pour over vegetables.  Refrigerate over night.

Roasted Potatoes
 
8eamedium size potatoes
1T paprika
½C cooking oil
 vegetable spray

Peel and cut into quarters the potatoes.  Cook in salted water about 15 minutes.  Drain.  Spray baking dish with vegetable spray.  Add potatoes pour cooking oil on top and mix well. Sprinkle paprika on top.  Bake in a 350 degree oven for 30 minutes until crispy.

Rosemary Potatoes
 
8 medium size potatoes
2Trosemary
½Ccooking oil
salt to taste

Peel and cut into quarter the potatoes.  Boil in salted water for 15 minutes.  Drain water.  Spray baking dish with vegetable spray and add potatoes.  Pour cooking oil over potatoes and sprinkle with rosemary.  Bake in 350 degree oven for 30 minutes until crispy.  Stir often.

Zucchini with Bacon & Egg Sauce
 
4  slices bacon
2  green onions finely chopped
¼C tarragon vinegar
2lbzucchini cut in very thin diagonal slices
 Boiling salted water
3  hard cooked eggs, chopped

Fry bacon until crisp and remove from pan.  Drain and crumble bacon.  Add onions to bacon fat and sauté until wilted; stir in vinegar.  Soak zucchini in a small amount of boiling salted water for 3 min. no longer.  Drain and put in a heated serving dish.  Sprinkle eggs on top, and then crumbled bacon.  Finally pour hot vinegar mixture over all.

Fried Green Tomatoes
 
2-3 Green Tomatoes, sliced
 ½CFlour
 2TButter
  salt to taste

Put flour in a bag, add a little salt and pepper, and shake the tomato slices to coat.  

In a skillet, heat 2 T cooking oil and 2 T butter, add sliced tomatoes and cook slowly over low heat.

Vegetables

Creamed Cucumbers

  4ealarge cucumbers
½-1ptsour cream
  5T mayonnaise
1-1½C water
  ¼C vinegar
2-3T sugar
  ¼C cream
     Onion slices (optional)

Peel and slice cucumber. Soak overnight in salt water. Drain and rinse. Mix water, vinegar and sugar to taste. Add cream. Beat in sour cream and mayonnaise. Add cucumbers. Best if allowed to stand in refrigerator for a day before serving.
Corn Fritters

1C corn (from cob, frozen or canned) 
1eaegg
½t salt
½t baking powder
¼C milk
¼C flour

Mix all the ingredients together. Blend. Drop batter by spoonful into skillet containing 1/2 inch hot oil. Fry until golden brown on both sides. Makes 12 fritters. Pour syrup over them for a treat.
